- 4 Boneless chicken breasts
- Fresh mozzarella slices
- Ripe tomatoes (Roma or cherry)
- Fresh basil leaves
- 2 tablespoons Olive oil
- 1 teaspoon Garlic powder
- 1 teaspoon Italian seasoning
- Salt & black pepper to taste
- Balsamic glaze for drizzling
- Optional: crushed red pepper flakes
Instructions
- Preheat oven to 400°F (205°C). Lightly oil a baking dish.
- Slice a pocket into each chicken breast without cutting through.
- Season chicken inside and out with salt, pepper, garlic powder, and Italian seasoning.
- Stuff each breast with mozzarella, tomato slices, and basil.
- Secure with toothpicks if needed and brush lightly with olive oil.
- Bake uncovered for 25–30 minutes until chicken is cooked through and cheese is melted.
- Drizzle with balsamic glaze and rest briefly before serving.
Notes
- For added heat, sprinkle crushed red pepper flakes inside the chicken before baking.
- Ensure the chicken is cooked to an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes after baking for better slicing.
