Description

Ingredients

  • Chicken breasts, cubed or filleted
  • Cherry or Roma tomatoes, diced
  • Mozzarella cheese, shredded
  • Fresh basil, chopped
  • Garlic, minced
  • Olive oil
  • Balsamic vinegar
  • Salt & pepper
  • Italian seasoning

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a bowl, mix diced tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper — set aside for topping.
  3. Season chicken with salt, pepper, and Italian seasoning, then sear in a skillet until lightly golden on both sides.
  4. Transfer chicken to the baking dish and spoon the tomato mixture over the top.
  5. Sprinkle generously with mozzarella cheese.
  6. Bake for 20–25 minutes until the chicken is cooked through and cheese is bubbly.
  7. Garnish with extra basil and drizzle of balsamic glaze before serving.
