Ingredients
- Chicken breasts, cubed or filleted
- Cherry or Roma tomatoes, diced
- Mozzarella cheese, shredded
- Fresh basil, chopped
- Garlic, minced
- Olive oil
- Balsamic vinegar
- Salt & pepper
- Italian seasoning
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- In a bowl, mix diced tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper — set aside for topping.
- Season chicken with salt, pepper, and Italian seasoning, then sear in a skillet until lightly golden on both sides.
- Transfer chicken to the baking dish and spoon the tomato mixture over the top.
- Sprinkle generously with mozzarella cheese.
- Bake for 20–25 minutes until the chicken is cooked through and cheese is bubbly.
- Garnish with extra basil and drizzle of balsamic glaze before serving.
Notes
- For a spicier kick, add red pepper flakes to the tomato mixture.
