Instructions

- Scoop and bake cookies until just set and lightly golden; cool completely.
- Whip heavy cream with powdered sugar and vanilla until thick and creamy.
- Sandwich cream filling between cookie pairs.
- Melt chocolate chips with oil; spread a smooth chocolate layer on top and let set.
