Creamy oats layered with jammy blueberry compote and a luscious peanut butter swirl.


Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • 1 cup milk (dairy or almond)
  • 1 cup blueberries (fresh or frozen)
  • 2 tbsp peanut butter
  • 2 tbsp chia seeds
  • 2 tbsp maple syrup or honey
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon
  • Pinch of salt
  • 2 tbsp granola (for topping)

Instructions

  1. In a small saucepan, cook blueberries with 1 tbsp maple syrup over medium heat until thick and jammy (5–7 minutes). Cool.
  2. In a bowl or jar, mix oats, milk, chia seeds, remaining sweetener, vanilla, cinnamon, and salt.
  3. Layer half the oat mixture into jars, spoon blueberry compote on top, then remaining oats.
  4. Chill at least 4 hours or overnight until thick and creamy.
  5. Before serving, swirl peanut butter on top and sprinkle with granola for crunch.

Notes

  • For a vegan option, use almond milk and maple syrup.
