Billes de Tiramisu Fondantes are soft tiramisu-filled spheres coated in cocoa, featuring a creamy mascarpone core.

- 250g Mascarpone
- 200g Ladyfingers (boudoirs)
- 100ml Strong coffee (espresso)
- 50g Cocoa powder
- 50g Sugar
- 1 tsp Vanilla extract
- 100g White chocolate or additional mascarpone cream for the molten center
- Optional: 30ml coffee liqueur
Instructions
- Prepare filling: Whisk mascarpone, sugar, and vanilla until smooth. Chill briefly.
- Molten center: Melt white chocolate and blend with 1–2 tbsp mascarpone to form a creamy core; refrigerate until scoopable.
- Form cookie base: Crush ladyfingers finely; lightly moisten with espresso (and liqueur if using) until they form a moldable dough.
- Shape balls: Take a spoonful of cookie mixture, flatten in your palm, add a small dollop of mascarpone-chocolate core, and close into a sphere.
- Smooth & coat: Roll each ball to tighten the shape, then dust generously in cocoa powder.
- Chill: Refrigerate 1–2 hours so the texture becomes fudgy and firm.
- Serve: Slice one open before serving to reveal the creamy flowing center.

- Ensure the mascarpone is at room temperature for easier mixing.
- Adjust the amount of cocoa powder based on personal preference.
- For a stronger coffee flavor, increase the espresso used to moisten the ladyfingers.
