Description

A flavorful twist on the classic Big Mac, this pasta salad combines savory beef, pickles, cheese, and a creamy sauce for a delicious dish.


Ingredients

  • 1 lb Ground beef
  • 8 oz Chickpea pasta
  • 1 cup Dill pickles, chopped
  • 1 cup Sharp cheddar cheese, shredded
  • 2 cups Romaine lettuce, chopped
  • 1 cup Grape tomatoes, diced
  • 1/2 Red onion, finely chopped
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 1/2 cup Mayonnaise
  • 1/2 cup Greek yogurt
  • 1/4 cup Ketchup
  • 2 tbsp Yellow mustard
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Dill pickle juice
  • 1 tbsp Sesame seeds
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted water until al dente; drain and cool completely.
  2. Brown ground beef in a skillet with garlic powder, onion powder, paprika, salt, and pepper; cool.
  3. Whisk mayonnaise, Greek yogurt, ketchup, mustard, Worcestershire, and pickle juice to make the sauce.
  4. In a large bowl, combine pasta, beef, tomatoes, red onion, pickles, and cheddar.
  5. Pour sauce over the salad and toss until evenly coated.
  6. Fold in romaine lettuce just before serving.
  7. Finish with sesame seeds and extra pickles if desired.

Notes

  • Chill the salad for at least 30 minutes before serving for best flavor.
  • Feel free to adjust the amount of pickles and cheese to your taste.
