- 1 lb Ground beef
- 8 oz Chickpea pasta
- 1 cup Dill pickles, chopped
- 1 cup Sharp cheddar cheese, shredded
- 2 cups Romaine lettuce, chopped
- 1 cup Grape tomatoes, diced
- 1/2 Red onion, finely chopped
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Paprika
- 1/2 cup Mayonnaise
- 1/2 cup Greek yogurt
- 1/4 cup Ketchup
- 2 tbsp Yellow mustard
- 1 tbsp Worcestershire sauce
- 2 tbsp Dill pickle juice
- 1 tbsp Sesame seeds
- Salt and pepper to taste
Instructions
- Cook pasta in salted water until al dente; drain and cool completely.
- Brown ground beef in a skillet with garlic powder, onion powder, paprika, salt, and pepper; cool.
- Whisk mayonnaise, Greek yogurt, ketchup, mustard, Worcestershire, and pickle juice to make the sauce.
- In a large bowl, combine pasta, beef, tomatoes, red onion, pickles, and cheddar.
- Pour sauce over the salad and toss until evenly coated.
- Fold in romaine lettuce just before serving.
- Finish with sesame seeds and extra pickles if desired.
Notes
- Chill the salad for at least 30 minutes before serving for best flavor.
- Feel free to adjust the amount of pickles and cheese to your taste.
