Ingredients

  • 2 sheets of puff pastry
  • 1/2 cup basil pesto
  • 1 cup shredded mozzarella or Italian cheese blend
  • 1 egg (for egg wash)
  • Parmesan (optional)
  • Fresh rosemary
  • Cherry tomatoes or diced sun-dried tomatoes
  • Salt & pepper
  • Small star-shaped pastry cutouts for decoration

Instructions

  1. Roll out two sheets of puff pastry and cut both into matching Christmas tree shapes.
  2. Spread basil pesto on one pastry tree and sprinkle generously with mozzarella and small bits of tomato.
  3. Place the second pastry tree on top and gently press the edges to seal.
  4. Slice horizontal “branches” on both sides, then twist each strip to expose layers of pesto and cheese.
  5. Brush the entire tree with egg wash for a golden bake.
  6. Add rosemary sprigs tucked into the twists for decoration.
  7. Bake at 400°F (200°C) for 18–22 minutes until puffed, flaky, and deep golden; top with baked pastry stars.
