Description

Soft, buttery cinnamon rolls crowned with silky pistachio glaze and crunchy roasted pistachios.


Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 teaspoons instant yeast
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 cup shelled pistachios (finely chopped)
  • 1 cup warm milk
  • 1/4 cup unsalted butter (softened)
  • 1 large egg
  • 1 teaspoon salt
  • 4 oz cream cheese
  • 1 cup powdered sugar
  • 1/4 cup pistachio paste (or finely ground pistachios)
  • 1 teaspoon vanilla extract

Instructions

  1. Mix warm milk, yeast, and a teaspoon of sugar; let foam for 5 minutes.
  2. Combine flour, sugar, salt, egg, and softened butter. Add yeast mixture and knead until smooth and elastic. Let rise for 1 hour until doubled.
  3. Roll dough into a rectangle, spread softened butter, then sprinkle with brown sugar and cinnamon.
  4. Roll tightly into a log and slice into 9 even rolls. Place in a greased pan and let rise for 30–40 minutes.
  5. Bake at 350°F (175°C) for 18–22 minutes until golden brown.
  6. Blend cream cheese, powdered sugar, pistachio paste, and vanilla into a smooth glaze.
  7. Spread or pipe pistachio glaze over warm rolls and finish with chopped roasted pistachios.

Notes

  • Ensure the milk is warm but not hot to avoid killing the yeast.
  • For best results, use fresh pistachios and grind them just before use.
  • These rolls are best enjoyed warm on the day they are made.
