Description
Soft, buttery cinnamon rolls crowned with silky pistachio glaze and crunchy roasted pistachios.

- 3 1/2 cups all-purpose flour
- 2 1/4 teaspoons instant yeast
- 1/4 cup brown sugar
- 1 tablespoon cinnamon
- 1 cup shelled pistachios (finely chopped)
- 1 cup warm milk
- 1/4 cup unsalted butter (softened)
- 1 large egg
- 1 teaspoon salt
- 4 oz cream cheese
- 1 cup powdered sugar
- 1/4 cup pistachio paste (or finely ground pistachios)
- 1 teaspoon vanilla extract
Instructions
- Mix warm milk, yeast, and a teaspoon of sugar; let foam for 5 minutes.
- Combine flour, sugar, salt, egg, and softened butter. Add yeast mixture and knead until smooth and elastic. Let rise for 1 hour until doubled.
- Roll dough into a rectangle, spread softened butter, then sprinkle with brown sugar and cinnamon.
- Roll tightly into a log and slice into 9 even rolls. Place in a greased pan and let rise for 30–40 minutes.
- Bake at 350°F (175°C) for 18–22 minutes until golden brown.
- Blend cream cheese, powdered sugar, pistachio paste, and vanilla into a smooth glaze.
- Spread or pipe pistachio glaze over warm rolls and finish with chopped roasted pistachios.
Notes
- Ensure the milk is warm but not hot to avoid killing the yeast.
- For best results, use fresh pistachios and grind them just before use.
- These rolls are best enjoyed warm on the day they are made.
