Description

Authentic Golden Beef Plov is a flavorful Uzbek-style rice pilaf made with fragrant spiced rice, tender beef, sweet carrots, and fresh herbs.


Ingredients

  • 2 cups Basmati rice
  • 1.5 lbs Beef chuck (cubed)
  • 2 large Carrots (thick matchsticks)
  • 1 large Onion (sliced)
  • 1 head Garlic (whole, peeled outer skin)
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/4 cup Fresh parsley or cilantro (chopped)
  • 4 cups Water or beef broth

Instructions

  1. Rinse basmati rice until water runs clear; soak for 20 minutes, then drain.
  2. Heat oil in a heavy pot and sear beef cubes until deeply browned; remove and set aside.
  3. In the same pot, sauté onions until golden, then add carrots and cook until slightly softened.
  4. Stir in cumin, paprika, salt, and pepper; return beef to the pot and add water or broth to cover. Simmer 20–25 minutes until beef is tender.
  5. Spread drained rice evenly over the meat mixture without stirring. Gently pour hot water just to cover the rice.
  6. Place the whole garlic head in the center, cover, and cook on low until rice is tender and liquid is absorbed (15–20 minutes).
  7. Rest 10 minutes, fluff gently to combine layers, and garnish with fresh herbs before serving.
