Description
A bright, crunchy, sesame-kissed slaw with fresh veggies and protein-packed chickpeas.
Ingredients

- 2 Crisp cucumbers (thinly sliced)
- 1 can Chickpeas (drained & rinsed)
- 2 tbsp Sesame oil
- 3 tbsp Rice vinegar
- 1 cup Shredded carrots
- 1 Red onion (thinly sliced)
- 1/4 cup Fresh cilantro (chopped)
- 2 cloves Garlic (minced)
- 1 inch Fresh ginger (grated)
- 2 tbsp Soy sauce
- 1 tbsp Honey
- 2 tbsp Sesame seeds
Instructions
- In a large bowl, combine cucumbers, chickpeas, carrots, red onion, and cilantro.
- In a small bowl, whisk sesame oil, rice vinegar, soy sauce, honey, garlic, and ginger.
- Pour dressing over the vegetables.
- Toss until everything is evenly coated.
- Sprinkle in sesame seeds and gently mix.
- Taste and adjust salt, sweetness, or acidity.
- Chill briefly before serving for best flavor.
Notes
- For a spicier kick, add sliced jalapeños.
- Can be made a few hours in advance for better flavor.
- Store leftovers in an airtight container in the refrigerator.
