Description

A bright, crunchy, sesame-kissed slaw with fresh veggies and protein-packed chickpeas.


Ingredients

Scale
  • 2 Crisp cucumbers (thinly sliced)
  • 1 can Chickpeas (drained & rinsed)
  • 2 tbsp Sesame oil
  • 3 tbsp Rice vinegar
  • 1 cup Shredded carrots
  • 1 Red onion (thinly sliced)
  • 1/4 cup Fresh cilantro (chopped)
  • 2 cloves Garlic (minced)
  • 1 inch Fresh ginger (grated)
  • 2 tbsp Soy sauce
  • 1 tbsp Honey
  • 2 tbsp Sesame seeds

Instructions

  1. In a large bowl, combine cucumbers, chickpeas, carrots, red onion, and cilantro.
  2. In a small bowl, whisk sesame oil, rice vinegar, soy sauce, honey, garlic, and ginger.
  3. Pour dressing over the vegetables.
  4. Toss until everything is evenly coated.
  5. Sprinkle in sesame seeds and gently mix.
  6. Taste and adjust salt, sweetness, or acidity.
  7. Chill briefly before serving for best flavor.

Notes

  • For a spicier kick, add sliced jalapeños.
  • Can be made a few hours in advance for better flavor.
  • Store leftovers in an airtight container in the refrigerator.
