- 1 cup Reduced apple cider
- 2 1/2 cups Flour
- 1/2 cup Butter
- 1 cup Brown sugar
- 2 Eggs
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1 tsp Baking soda
- 1 cup Powdered sugar
- 1 tsp Vanilla extract
- 1/2 cup Heavy cream (for caramel)
Instructions
- Reduce apple cider on the stove until syrupy; cool completely.
- Cream butter and brown sugar, then add eggs and the reduced cider.
- Mix in flour, baking soda, cinnamon, and nutmeg to form a soft cookie batter.
- Scoop small rounds onto a lined tray and bake at 350°F for 10–12 minutes.
- Make caramel filling by whipping butter, powdered sugar, vanilla, and cooled caramel until fluffy.
- Pipe filling between two cookies to create whoopie pies.
- Drizzle warm caramel over the tops and serve.
Notes
- Ensure the apple cider is reduced to a syrupy consistency for the best flavor.
- Let the cookies cool completely before adding the filling to prevent it from melting.
- Warm caramel can be made by gently heating store-bought caramel sauce.
