Description

Soft, spiced apple-cider cookies sandwiched with silky caramel cream and drizzled with warm caramel.


Ingredients

  • 1 cup Reduced apple cider
  • 2 1/2 cups Flour
  • 1/2 cup Butter
  • 1 cup Brown sugar
  • 2 Eggs
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 tsp Baking soda
  • 1 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1/2 cup Heavy cream (for caramel)

Instructions

  1. Reduce apple cider on the stove until syrupy; cool completely.
  2. Cream butter and brown sugar, then add eggs and the reduced cider.
  3. Mix in flour, baking soda, cinnamon, and nutmeg to form a soft cookie batter.
  4. Scoop small rounds onto a lined tray and bake at 350°F for 10–12 minutes.
  5. Make caramel filling by whipping butter, powdered sugar, vanilla, and cooled caramel until fluffy.
  6. Pipe filling between two cookies to create whoopie pies.
  7. Drizzle warm caramel over the tops and serve.
